These easy Keto air fryer onion rings are prepared with white onion coated in a simple batter of ground almonds, egg, seasoning, grated parmesan, a little oil and baking soda. The onion is sliced into 1/2 inch thick rings before being dredged in the batter to coat. Once fried the batter will be crisp at the edges with a soft onion center. Low FODMAP Vegan Indian Potato Patties with Green Herb Chutney (Aloo Tikki)

⭐ 4.8/5 (2781) 🔥 190 cal

Aloo Tikki is a flavorful and simple vegan dish made from mashed potatoes, spiced with garam masala and chives. Ground almonds replace breadcrumbs to keep it low FODMAP. These patties are crisp outside, smooth inside, and served with a fresh herb chutney. They can be enjoyed hot or cold, as a main or snack. Garam masala can be substituted with curry powder (check for garlic/onion), or a homemade spice blend. Traditionally, garden peas are added, but limit to 60g for low FODMAP. Almond flour can be replaced with ground Brazil nuts, pumpkin seeds, or sunflower seeds. Serve the patties with green herb chutney and a low FODMAP salad or vegetables, or as lettuce wrap burgers. They can be baked instead of fried: bake at 400°F/200°C for 18-20 minutes, flipping halfway, until golden and crisp. Cool before storing in the fridge for up to 5 days.

Sweetener-Free Keto Dark Chocolate Coated Marzipan Candy Truffles

⭐ 4.8/5 (1514) 🔥 160 cal

These no-bake, sweetener-free Keto candy truffles have an almond marzipan filling and are coated in dark chocolate and studded with roasted almond pieces. These sweetener-free Keto desserts are an easy treat to make, made from simple store-cupboard ingredients. Use 100% pure cocoa mass or dark chocolate with at least 80% cocoa. Any leftover melted chocolate can be poured onto a piece of baking paper and sprinkled with nuts or seeds to make a chocolate bark bar. It’s useful to have digital scales to hand so you can weigh out equal portions of marzipan. Pure cocoa mass is also known as cacao/cocoa paste or cocoa liquor. It's a nutrient-dense mass made from the cacao bean and is bursting with antioxidant flavonoids. If you don't have pure cocoa mass, you can use stevia-sweetened dark chocolate or dark chocolate with at least 85% cocoa instead. This recipe is naturally gluten-free and can be made vegan by substituting the egg white for 2 tablespoons aquafaba liquid or vegan egg replacement powder. If you are including sweeteners in your diet, add 2 tablespoons of Keto maple syrup into the marzipan and sweeten the cocoa mass to your liking in the melting step. For another recipe variation, you can skip the melted chocolate and nuts and simply roll in pure Dutch-process cocoa/cacao powder. These will keep well for 10-14 days if stored in an air-tight container in the fridge.
