A classic Vietnamese favorite - pandan waffles- made into a low carb version! Keto waffle batter is flavored with pandan extract and then cooked until GBD (golden brown and delicious). The brown exterior gives way to a bright green center that is soft and moist. Top the final pandan waffles with a sprinkling of powdered erythritol to make it pretty. Serve it nice and hot, just like the street vendors would! You can find pandan extract at your local Asian market. Pandan extract is sold on large online retailers like Amazon. Pandan extract has a light, almost green tea/almond flavor. It is very nice and subtle. Not to mention, the color is stunning! Keto waffles are very delicate! The trick is to ignore the light on the waffle iron that signals that the waffle is done cooking (because it will not be done). Place the waffle iron on medium heat. Spray the waffle iron very generously with a high temp cooking spray (like a grill version). Place the batter into the iron and allow it to cook for 6-7 minutes. Very, very gently begin to open the iron and make sure the waffle starts to release from the iron. If not, use a butter knife to help to pull it off the waffle iron before opening the waffle iron all the way. If you open the waffle iron before the waffle is finished cooking, it will split in two.
