Instructions

    Cut the red cabbage in half and carefully separate the leaves.

    Wash and cut the carrots and cucumbers into julienne strips. Wash all the herbs. You can pick the herbs ahead of time or do it at the table for a more interactive experience.

    Heat a large saute pan over medium heat until hot. Add 1 tablespoon of oil and heat until shimmering. If using bone-in chicken thighs, remove the bone but leave the skin on. Sprinkle with salt. Add the chicken thighs skin side down. Cook for 12-15 minutes until very crispy and golden. Flip the chicken and repeat on the other side until browned and cooked through, about 10 minutes. Remove from the pan and let cool for a few minutes before slicing into thin strips.

    In a small bowl, combine soy sauce (or tamari), lime juice, and grated ginger.
