Description

Imagine starting your day with a warm, comforting biscuit, its tender crumb soaking up a rich, savory sausage gravy. This simple breakfast creation is designed for those mornings when time is scarce, but the craving for a satisfying, home-style meal is strong. The beauty of this dish lies in its ease and speed.

Crafted in a single mug, it minimizes both preparation and cleanup. The biscuit itself is light yet filling, providing a delightful base for the star of the show: the creamy, flavorful sausage gravy. This gravy, ready in moments, blankets the biscuit with a peppery warmth and meaty richness that awakens the senses.

Each bite offers a textural symphony – the slight give of the biscuit, the velvety smoothness of the gravy, and the satisfying chew of the sausage. The flavors meld together beautifully, creating a harmonious balance of savory goodness that will leave you feeling content and ready to tackle the day. While perfect as a standalone breakfast, this biscuit and gravy also shines as a versatile side dish.

Pair it with fluffy scrambled eggs, crispy bacon, or your favorite morning protein source for a more substantial meal. The possibilities are endless, allowing you to customize your breakfast experience to your exact liking. Though best enjoyed fresh, any leftover gravy and biscuit can be stored separately in the refrigerator.

However, to truly experience the intended taste and texture, we highly recommend enjoying this comforting creation immediately after preparation. Feel free to experiment with different types of cooked breakfast sausage to discover your ideal flavor profile, or use ground pork sausage, cooked to your preference. This recipe is a blank canvas, inviting you to personalize it and make it your own.

Instructions

    1.
Choose a coffee mug or a similar heat-safe mug that’s at least 12 fluid ounces or larger. Combine almond flour, coconut flour, baking powder, erythritol, and salt together in the bottom of the mug. You don’t have to mix the ingredients yet.
    2.
Now, stir egg and room temperature avocado oil into the mug. Stir until completely combined. Set the mug aside for later.
    3.
Prepare the gravy by crumbling cooked sausage into heavy cream in a separate heat-safe container. Mix the second amount of salt with xanthan gum (this helps the gum to disperse better without any clumps), then add the xanthan mixture to the cream. Stir the ingredients together, then microwave them for 45 seconds.
    4.
Go back to your biscuit and microwave the biscuit for 1 minute. Set aside to cool and rest for easier removal later. Stir the gravy together and return it to the microwave.
    5.
Microwave the gravy again for 30 seconds, then stir it together a final time. It should be thickened well by now. Cut the biscuit into 4 equal pieces.
    6.
Pour the hot gravy over the top of the biscuits. Serve hot with fresh-cracked black pepper or an extra pinch of salt. Let leftovers cool completely before storing them.
