Description

Imagine a warm, comforting casserole that captures all the savory flavors of pizza without the traditional crust. This pizza casserole begins with a hearty base of browned ground beef, its rich taste enhanced by a robust and zesty tomato sauce. The sauce, simmered to perfection, infuses the beef with a depth of flavor that is both satisfying and enticing.

A generous layer of melted mozzarella cheese blankets the beef and sauce, creating a gooey, golden-brown topping that stretches with each spoonful. The cheese, slightly browned in spots, adds a creamy and decadent element to the dish. Scattered across the cheesy surface are vibrant red bell peppers, adding a touch of sweetness and a satisfying crunch.

Olives, with their briny and slightly bitter notes, provide a delightful contrast to the richness of the beef and cheese. Capers, tiny bursts of salty and tangy flavor, further elevate the complexity of the dish. Baked until bubbly and fragrant, this casserole offers a delightful combination of textures and tastes.

The tender beef, the smooth sauce, the melted cheese, and the crisp vegetables all come together in perfect harmony. The beauty of this casserole lies in its adaptability. Feel free to customize it with your favorite pizza toppings.

Pepperoni adds a spicy kick, while spinach brings a fresh, earthy note. Mushrooms lend a meaty texture, and zucchini offers a mild, subtly sweet flavor. For a touch of Italian flair, consider adding prosciutto or fresh basil.

Cheddar cheese can be used in place of mozzarella for a sharper, tangier flavor. Serve this versatile casserole with a crisp side salad or a selection of your favorite vegetables. It's equally delicious served with a peppery arugula salad.

For a vegetarian option, simply substitute the ground beef with zucchini strips or cauliflower florets. This pizza casserole is also perfect for reheating. Simply pop it in the microwave or oven for a quick and easy meal.

Instructions

    1.
Make the pizza sauce. Finely dice the onion. In a pan over medium heat, add 2 tablespoons of olive oil and saute 1/4 cup of onion until softened. Crush in the garlic and stir.
    2.
Tip in 3/4 can of canned tomatoes into the onion mixture. Add sea salt, 1 teaspoon dried oregano, paprika, chili flakes, and black pepper. Simmer on low for 10 minutes or until the sauce has reduced and thickened. Adjust seasoning to taste.
    3.
Preheat the oven to 350°F/180°C. Add the remaining 2 tablespoons of olive oil and 1/4 onion to a skillet and saute over medium-high heat until softened. Add the ground beef and saute until browned all over. Pour the pizza sauce over the beef mixture and stir through. Transfer the beef mixture to an ovenproof casserole if not using a skillet.
    4.
Layer 3/4 cup of mozzarella over the beef. Slice the red bell pepper and layer 6 segments over the cheese. Drop in the olives and capers and any other toppings.
    5.
Sprinkle the remaining 3/4 cup mozzarella cheese over the peppers and olives. Then sprinkle 1/4 teaspoon dried oregano over the top.
    6.
Bake in the center of the oven for 20 minutes or until the cheese has melted and turned golden. Serve immediately.
