    Roughly chop the onion and crush the garlic. Heat olive oil in a skillet over medium-high heat, add the onions, and cook until translucent, about 2-3 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the minced beef and cook for 8 minutes, breaking it apart with a wooden spoon, until browned.

    Transfer the cooked ground meat to your crockpot. Roughly chop the tomato, green pepper, and green chili, then add them to the beef. Mix in the tomato paste, beef broth, cumin powder, oregano, chili powder, sea salt, black pepper, and bay leaf. Stir everything together thoroughly.

    Cook for 5-7 hours on low, or 3-4 hours on high. Remove the bay leaf when done. Taste the beef chili and adjust seasoning if needed.

    Divide the chili into 4 microwave-safe containers, and grate cheese on top. Portion out sour cream into 4 small containers, and store them in the fridge with the chili. Microwave the chili for 1-2 minutes, then top with fresh cilantro leaves when ready to serve.
