Description

Imagine a vibrant salad, tossed with a tangy vinaigrette that awakens the palate. This is a simple side dish, yet its layers of flavor and texture make it a standout accompaniment to grilled chicken, baked salmon, or seared pork chops. Picture yourself preparing this salad on a busy weeknight; its ease of preparation is a welcome change.

The vinaigrette is the heart of this salad, a balanced combination of acidity and richness achieved through a classic equal parts ratio of vinegar to olive oil. This allows for creativity—experiment with different vinegars to discover your favorite profile. Apple cider vinegar, with its subtle sweetness, is an excellent starting point, lending a mellow depth that enhances the other ingredients.

The result is a dressing that is both bright and smooth, coating each component of the salad without being heavy. As you toss the salad, notice the interplay of textures. The crisp greens provide a refreshing base, while creamy feta cheese crumbles add a salty and tangy counterpoint to the vinaigrette.

The feta’s richness melts slightly into the greens, creating small pockets of flavor that surprise and delight. Finally, toasted pecans contribute a satisfying crunch and a nutty warmth that ties all the elements together. The toasting process intensifies their natural sweetness, making them an irresistible addition.

Each bite of this salad is a journey: first, the coolness of the greens, followed by the tang of the vinaigrette, the creamy saltiness of the feta, and the satisfying crunch of the pecans. The flavors meld together beautifully, creating a harmonious and well-rounded dish. Its simplicity is its strength, allowing the quality of the ingredients to shine.

This salad is more than just a side dish; it’s a celebration of fresh, vibrant flavors and satisfying textures that will leave you feeling nourished and content. It’s a recipe you’ll turn to again and again, a reliable and delicious way to elevate any meal.

Instructions

    1.
Preheat oven to 450 F. Toast pecans for 3 minutes. Let cool.
    2.
Cut a red onion in quarters and slice one quarter very thin.
    3.
In a small bowl, whisk together the oil, vinegar, salt, and pepper to taste (a couple of good pinches of salt and several cracks of pepper).
    4.
In a large bowl, combine the spinach, red onion, toasted pecans, and crumbled feta (crumble the feta super large). Add half of the vinaigrette and gently toss the salad. Serve the rest of the dressing on the side. Serve immediately! You can prepare the salad without the dressing up to a day in advance, just add dressing before serving.
