Instructions

    Start by combining tomato sauce, dijon mustard, apple cider vinegar, water, brown sugar erythritol, paprika, cinnamon, ground clove, cayenne, onion powder, garlic powder, and pepper in a pot on the stove. Whisk the ingredients together and begin heating them to a simmer. You’ll simmer the sauce until it heats through and thickens slightly - just about 5 minutes.

    Set the barbecue sauce aside for now. Prepare chicken breasts by patting them dry with paper towels, then begin heating the olive oil in a large pan on high heat. Once the oil is hot, place the chicken in and brown them on both sides.

    Add the browned chicken to the base of a crock pot or slow cooker. Pour the barbecue sauce over the chicken in the crock pot. Cook the chicken on high heat for 4 hours or low heat for 8 hours. Once the chicken is done cooking, shred the chicken apart with a pair of forks in the crock pot.

    Stir the chicken and barbecue sauce together. It is optional to cook the chicken for an additional hour after shredding it in the sauce. However, this extra time is not included in the recipe. Serve the chicken as you would prefer. If you’d like to add salt, taste your chicken and salt to taste before serving.
