These delightful vegan nuggets offer a flavorful and satisfying plant-based option suitable as a snack, appetizer, side dish, or even the centerpiece of a meal. Crafted with a blend of carefully chosen ingredients, these nuggets present a symphony of textures and tastes that will appeal to a wide range of palates. The base of these nuggets features cooked cauliflower rice, providing a light and subtly sweet foundation that perfectly complements the other components.

Diced red bell pepper adds a touch of sweetness and a vibrant color, while garlic and onion contribute savory notes that deepen the overall flavor profile. Fresh cilantro introduces a refreshing, herbaceous element, balancing the richness of the other ingredients. Ground almonds provide a delicate nuttiness and help to bind the mixture together, creating a pleasingly firm yet tender texture.

Tahini, a sesame seed paste, lends a creamy smoothness and a subtle earthy flavor, adding depth and complexity to the nuggets. Once prepared, these nuggets are baked until they achieve a beautiful golden-brown hue and a satisfyingly crispy exterior. The baking process enhances the natural flavors of the ingredients, creating a warm and inviting aroma that will whet your appetite.

Versatile and adaptable, these nuggets can be served in a variety of ways to suit your preferences. Enjoy them alongside a fresh side salad for a light and refreshing meal, or pair them with steamed vegetables for a more substantial and nutritious option. They also make a fantastic addition to any buffet or gathering, offering a flavorful and plant-based alternative to traditional appetizers.

For an extra burst of flavor, serve these nuggets with your favorite dipping sauce. Whether you prefer a creamy aioli, a tangy barbecue sauce, or a spicy sriracha mayo, the possibilities are endless. Feel free to experiment with different flavor combinations to create your own signature dipping sauce.

You can bake them in the oven for a more traditional cooking method, or air fry them for a quicker and equally delicious outcome. The air fryer produces exceptionally crispy nuggets with a slightly drier texture. Regardless of the cooking method you choose, these vegan nuggets are sure to be a hit.

Their irresistible flavor and satisfying texture will leave you wanting more, making them a perfect addition to your culinary repertoire.

Instructions

    1.
In a saucepan, combine the cauliflower rice with 1/2 cup of water. Bring to a boil, then reduce to a simmer and cook for 3-4 minutes, or until the rice is tender. Drain any excess liquid and set aside to steam dry.
    2.
Finely dice the bell pepper and onion. Roughly chop the cilantro. In a food processor, combine the cooled cauliflower rice, bell pepper, onion, garlic, cilantro, ground almonds, salt, and pepper. Pulse until well combined.
    3.
Add the tahini to the food processor and blend until a thick paste forms. The mixture should be shapeable with your hands, neither too wet nor too dry.
    4.
Line a shallow oven tray with baking paper. In a small bowl, add 1/4 cup ground almonds and season with salt and pepper. Divide the paste mixture into 12 equal portions. Shape each portion into a nugget and roll it in the ground almonds to create a light breading.
    5.
Arrange the breaded nuggets on the lined oven tray. Bake for 15-17 minutes, or until they are heated through and golden brown all over. Serve immediately.
