Instructions

    Dice the broccoli into bite sized chunks and the green beans into thirds. Add to a small saucepan of boiling water and simmer for 3-4 minutes until crisp-tender. Drain completely and steam dry.

    Heat the olive oil in a skillet over a medium heat. Add the shallots, broccoli and beans. Stir fry for a minute or so until the shallot is tender.

    Add the cauliflower rice, stir well to combine and pan fry for a minute.

    Make a well in the center of the rice. Beat the egg and add to the well. Allow to settle for a moment then scramble into the rice and vegetables, until cooked through.
