Low Carb Vegetarian Mashed Potato Bowl

Description

Imagine a comforting bowl filled with creamy, smooth cauliflower mash, so delightful it rivals traditional mashed potatoes. This is a hearty, satisfying dish, perfect as a high-protein vegetarian option. The secret is in the careful preparation, where the cauliflower is transformed into a velvety base, ready to embrace a rich, savory vegetarian gravy.

This gravy, subtly thickened, drapes beautifully over the cauliflower, adding a layer of warmth and depth. To complete this culinary creation, we add perfectly hard-boiled eggs. Their firm texture and delicate flavor create a lovely contrast with the softness of the mash and gravy.

For added richness, consider melting a generous layer of your favorite shredded cheese over the warm bowl. The cheese melts into every nook and cranny, creating a delightful, gooey blanket. To boost the protein content, hard cheeses like parmesan are an excellent choice.

But the possibilities don't end there. This bowl invites customization. Diced tofu or creamy avocado can add further protein and textural interest.

For those craving an extra layer of flavor, a dash of hot sauce provides a welcome kick. Nutritional yeast offers a cheesy, umami-rich alternative for dairy-free diners. Cauliflower truly shines in this recipe, proving its versatility as a substitute for potatoes.

Its mild flavor makes it a blank canvas, ready to absorb any seasoning. The result is a comforting, nourishing bowl that satisfies cravings and delivers a balanced vegetarian meal.

Instructions

    1.
Cut the cauliflower into large pieces and add them to a pot. Cover the cauliflower with water, then bring the pot to a boil on your stove. Cook the cauliflower for 10-15 minutes until the core is soft enough to pierce with a fork.
    2.
Drain and add the boiled cauliflower to a blender or food processor. Blend the cauliflower with butter, pea protein powder, salt, pepper, onion powder, and garlic powder. Once your cauliflower resembles mashed potatoes, add it to your serving bowl. Leave this aside for later.
    3.
While the cauliflower is boiling, you can make your eggs. Hard-boil your eggs (or cook them to your liking). Once the eggs are cooled and peeled, you can slice them.
    4.
To make the gravy for the mashed potato bowl, whisk together vegetable broth and tapioca starch in a small bowl. Then, pour the mixture into a pot and begin heating the broth until it thickens. Whisk heavy cream into the gravy along with the remaining ingredients. Remove the gravy from the heat once it thickens to your desired consistency.
    5.
Assemble your mashed potato bowl by arranging the sliced eggs over the potatoes in your bowl. Pour the gravy over the top and enjoy. Refer to the top of the recipe introduction for suggestions on more toppings to include.
