Description

Indulge in a delightful cheese alternative that satisfies cravings without compromising dietary preferences. This vegan mozzarella, crafted primarily from cashews, boasts a remarkably creamy texture and subtly sweet flavor, thanks to the cashews' inherent oils. The preparation is surprisingly straightforward: softened cashews are blended with a few simple ingredients, including nutritional yeast, which lends a savory, cheesy essence.

Through a touch of culinary artistry, the mixture transforms into a visually appealing ball of mozzarella. The result is a versatile cheese that can be sliced and enjoyed as is, or melted over your favorite dishes, mimicking the experience of traditional mozzarella. Its texture is smooth and yielding, offering a pleasant mouthfeel.

The flavor is a harmonious blend of mild nuttiness from the cashews and the umami notes of nutritional yeast, creating a well-rounded and satisfying taste profile. The finished cheese has a delicate aroma that enhances its appeal. This cheese alternative is not only delicious but also caters to those seeking plant-based options.

To expedite the softening process, cashews can be soaked overnight in room temperature water. This reduces blending time, allowing for a quicker preparation. Once blended, the mixture is cooked to remove excess moisture, concentrating the flavors and improving the texture.

Chilling the cheese solidifies its form, making it easy to slice and serve. Stored properly in an airtight container in the refrigerator, this homemade vegan mozzarella will maintain its freshness and flavor, ready to elevate your meals with its creamy, cheesy goodness. Whether you're vegan, lactose-intolerant, or simply looking for a healthier alternative to traditional cheese, this cashew-based mozzarella is sure to impress.

Instructions

    1.
Fill a pot with cashews and enough water to cover them by 4-5 inches. Cover and bring to a boil on high heat, then continue boiling for 15 minutes or until the cashews are soft, adding water as needed to prevent burning. Once soft, drain the water and transfer the hot cashews to a food processor. Blend until they form a chunky paste.
    2.
Add the remaining ingredients to the food processor. Blend until you have a thick, creamy paste, scraping down the sides as needed. Taste and adjust the mixture by adding more salt, lemon juice, yeast, or other flavorings, keeping in mind that mozzarella should have a mild flavor.
    3.
Scrape the paste into a clean pot set over medium heat on the stove. Stir continuously as the moisture evaporates, and the paste turns into a dough that forms a ball. When the mozzarella ball is no longer sticky, transfer it to a container to cool. Once cooled to room temperature, cover and chill in the refrigerator for at least 1 hour before slicing and serving.
