Instructions

    Prepare a large pot of boiling salted water with 2 tbsp of kosher salt. Trim the green beans and place them in the boiling water for one minute until they turn a nice green color and are still crunchy. Drain and set aside.

    Heat a large nonstick skillet over medium-high heat, melt the butter, and coat the pan evenly. Add the minced garlic and sliced onions, cooking briefly for about 30 seconds while stirring constantly. Add ¼ tsp kosher salt to the onions. Add the destemmed and thinly sliced mushrooms. Saute the mushrooms for several minutes until well browned, then add ½ tsp kosher salt and ¼ tsp black pepper.

    Add the cream and water to the skillet. Stir until combined and bring to a simmer. Simmer until the cream has reduced slightly, then sprinkle xanthan gum over the top of the cream sauce. Stir immediately and cook until the sauce coats the back of a spoon.

    Preheat the oven to 350°F (175°C). Place the cooked green beans into a 10” x 14” oval casserole dish or a similar-sized dish.

    Pour the cream sauce over the green beans, using a wooden spoon or spatula to coat them thoroughly. Alternatively, toss the sauce with the green beans in a separate bowl.
    6.
    Top the green beans with crispy fried onions. Bake in the preheated oven for 15 minutes, or until the sauce is bubbling and hot throughout.
