Instructions

    1.
    Begin by making the White Rosemary Gravy. Melt the butter in a small pot over low heat. Then, gently whisk in the cream in 2-3 additions. Whisk until the fats combine.

    Next, whisk in the beef broth in about 4 additions. Whisk in the first amount of salt and pepper, the onion powder, as well as the rosemary (about 1 sprig).

    Put a lid on the pot, and let the gravy simmer for about 2 minutes. Then, remove the rosemary sprig. Transfer 1 cup of the liquid to a separate bowl, and whisk the sour cream into that liquid (this will be nearly all the gravy liquid, but not quite). Return the thickened liquid to the heated pot.

    Keep the gravy at a very low simmer and allow it to cook and thicken for about 3-4 minutes. Finally, remove the gravy from the heat and allow it to cool rapidly in a refrigerator or freezer to solidify slightly while the rest of the recipe is prepared.

    Chop and boil the cauliflower in a large pot of water until it is al dente.

    Transfer the hot cauliflower (no water) to a food processor. Blend the cauliflower until you get the consistency of mashed potatoes.

    Preheat an oven to 350 degrees. Spray a 9X13 glass baking dish lightly with pan spray. Spread the mashed potatoes on the bottom of the pan. Then, sprinkle the second amount of salt and pepper over it. Use a spoon to arrange about of the cooled gravy over the potatoes .

    Chop the green beans if necessary, and arrange them somewhat evenly over the bottom layer in the dish.

    Slice or shave the cooked turkey if needed. Arrange this as the final layer on top of the dish. You can use an assortment of large and small pieces, but the main goal is to completely cover the top without exposing any green beans or cauliflower.

    Drizzle the leftover gravy over the turkey. You want most of the turkey covered to help it from drying out in the oven.

    Bake the dish in the oven, uncovered, for about 30 minutes. You can bake longer to obtain more of a crust on the edges if you wish.

    For serving, slice the casserole into 6 portions. Top each portion off with about oz of dried cranberries ( approx. 6 pieces). If you have extra gravy, you can serve this with your meal!
