Description

Imagine a bubbling, golden-brown bake, its surface a mosaic of melting cheese with savory aromas that promise warmth and comfort. This dish, inspired by Alpine traditions, offers a delightful twist on familiar flavors, replacing the usual potatoes with celeriac, a root vegetable with a subtle celery-like note and a texture that holds its own beautifully against the richness of the other ingredients. Each bite is an experience: the creamy, almost velvety texture of the melted cheese blankets the tender celeriac, creating a symphony of textures that dance on the palate.

The sharpness of the cheese, traditionally a Reblochon, though a Brie works wonderfully too, cuts through the richness, adding a layer of complexity. Hints of caramelized onions weave through the dish, offering a touch of sweetness that balances the savory notes. This bake is more than just a side dish; it's a hearty and satisfying meal on its own.

Picture yourself on a chilly evening, the aroma of this dish filling your kitchen, a glass of crisp white wine in hand. It’s the perfect accompaniment to a simple green salad or roasted vegetables, making it a versatile addition to any menu. The celeriac, with its slightly earthy flavor, absorbs the cream and cheese, resulting in a dish that is both comforting and surprisingly light.

The gentle bite of black pepper adds warmth and enhances the other flavors. The dish presents beautifully, making it an ideal option for a casual get-together or a cozy night in. Its simple preparation belies the depth of flavor, making it a dish that both the cook and the diners will appreciate.

Instructions

    1.
Preheat the oven to 390 degrees Fahrenheit and grease an oven proof dish with butter.
    2.
Dice the celeriac into large chunks and add to a large pan. Cover with boiling water and bring to a boil. Boil gently over a medium heat until tender – about 20 minutes.
    3.
While the celeriac is cooking, finely slice the onion and garlic and dice the bacon.
    4.
Heat the butter in a large frying pan over a low/medium heat and add the bacon, garlic and onion. Fry gently until the onion is soft and translucent and the bacon is cooked – about 5/6 minutes.
    5.
Once cooked, drain the celeriac and slice into thick pieces (about ¼ inch thick).
    6.
Keeping on a low heat, add the celeriac to the pan with the bacon, onion and garlic. Stir to combine.
    7.
Add the cream to the pan with the fresh thyme and a pinch of black pepper. Simmer gently for 5 minutes to infuse the flavors.
    8.
Spoon half of the creamy mixture into the buttered dish and top with half the cheese.
    9.
Spoon the remaining mixture over the top and layer with the rest of the cheese.
    10.
Transfer to the oven and bake for 25 minutes until golden and bubbling.
