Description

Imagine a pizza that dances on your palate, a symphony of textures and tastes that feels both indulgent and wholesome. This isn't your average slice; it's a carefully crafted experience, beginning with a crust that redefines what gluten-free can be. Made from a simple quinoa flour base, it achieves a remarkable bread-like quality, offering a satisfying chewiness without the heaviness.

The crust boasts a delicate crispness that gives way to a soft, airy interior, providing the perfect foundation for the flavors to come. Instead of traditional tomato sauce, a generous smear of creamy goat cheese blankets the crust, its tangy notes providing a bright, refreshing counterpoint to the richer elements of the pizza. Thinly sliced salami, with its salty, savory character, is scattered artfully across the cheese, each bite delivering a burst of umami that awakens the senses.

A subtle hint of red pepper flakes adds a touch of warmth, a gentle caress of heat that lingers on the tongue, enhancing the other flavors without overpowering them. The beauty of this pizza lies in its simplicity and the quality of its ingredients. The combination of the tangy goat cheese, the salty salami, and the subtle spice creates a harmonious balance that is both satisfying and craveable.

Feel free to experiment with other cured meats – perhaps prosciutto or spicy soppressata – to create your own signature variation. Just ensure they complement the other flavors and maintain that delightful contrast. Beyond its incredible taste, this pizza offers a lighter, more nourishing alternative to traditional options.

It's a guilt-free indulgence you can feel good about enjoying, a testament to the fact that delicious food can also be good for you. It’s perfect for a cozy night in, a casual gathering with friends, or any occasion that calls for a truly special pizza experience. Every bite is a celebration of flavor, texture, and the simple joy of good food.

Instructions

    1.
Preheat the oven to 400F (200C). Heat the water to between 110-115F (43-46C). Use a thermometer to ensure the correct water temperature for activating the yeast.
    2.
In a small bowl, combine the warm water with the yeast and honey. Let the mixture sit for 5 minutes, allowing it to foam and activate the yeast.
    3.
Heat the quinoa flour in a dry pan over low heat for 1-2 minutes, stirring constantly until fragrant. Remove from heat and let it cool completely.
    4.
In a mixing bowl, combine the cooled quinoa flour, almond flour, flaxseed meal, and olive oil. Mix well to incorporate.
    5.
Once the yeast mixture is foamy, add it to the dry ingredients in the mixing bowl. Mix thoroughly until a batter forms.
    6.
Cover the bowl with plastic wrap and let the mixture sit for 30 minutes. It will rise considerably as the yeast works.
    7.
Line an 11-inch round piece of stoneware or a baking sheet with parchment paper, ensuring the paper extends up the sides.
    8.
Divide the batter in half and spread one portion evenly over the prepared baking sheet, using an offset spatula to reach the edges.
    9.
Bake the crust for 25 minutes. At this point, it should easily release from the parchment paper. Carefully remove the crust with the parchment paper attached and peel the parchment off. Flip the crust upside down.
    10.
Spread half of the tomato sauce evenly over the crust, leaving a 1 1/2-inch border around the edges.
    11.
Crumble half of the goat cheese over the tomato sauce. Evenly distribute 6 slices of salami over the cheese.
    12.
Turn the oven to broil and cook the pizza until the toppings are melted and the salami begins to crisp, approximately 30 seconds to 1 minute. Watch carefully to prevent burning. Remove from the oven and top with half of the red pepper flakes and fresh basil leaves. Repeat with the remaining batter to make another pizza.
