Description

Imagine sinking your teeth into a slice of soft, airy bread, its surface adorned with a delicate, toasty crust of sesame seeds. This bread offers a delightful alternative to traditional sandwich loaves, providing a satisfying base for your favorite fillings. The secret to its remarkable fluffiness lies in the generous incorporation of whipped egg whites, which constitute a significant portion of the batter.

These airy whites create a light and voluminous texture that distinguishes this bread from denser alternatives. This recipe yields a smaller batch, perfectly sized for a treat without being overwhelming. Baking, often regarded as a precise art, relies on the careful balance of ingredients and techniques.

In this recipe, one crucial element is often overlooked: air. The process of whipping egg whites at high speed introduces countless tiny air bubbles, which are essential for creating a light and airy texture. It's important to handle these whipped whites with care, ensuring that the precious air bubbles are not deflated.

As the bread bakes, these air bubbles remain suspended within the structure, contributing to its rise and creating the characteristic network of tiny holes that give it its signature fluffiness. The sesame seeds not only add a visually appealing touch but also impart a toasty, subtly nutty flavor that complements the overall taste profile. They also provide a pleasant textural contrast, offering a delightful crunch with each bite.

Feel free to experiment with different toppings to personalize your bread. Poppy seeds or crushed peppercorns can be used as substitutes, or you can add dried garlic or onion powder for a savory twist. If you opt for fresh herbs, gently fold them into the whipped egg whites before combining them with the dry ingredients.

This ensures even distribution and prevents them from becoming weighed down. Let your creativity guide you as you explore various flavor combinations and discover your own signature version of this delightful bread.

Instructions

    1.
Preheat the oven to 325 degrees. In a mixing bowl, combine almond flour, coconut flour, baking powder, stevia, xanthan gum, salt, sesame seeds, and melted butter. Use a spatula to mix the ingredients together until you have a crumbly dough. Meanwhile, place all the egg whites and the cream of tartar in a stand mixer. Whip on high speed until you have stiffly whipped egg whites.
    2.
Use your spatula again to fold the whipped egg whites into the dry mixture in 3-4 additions. Fold gently and only just enough to combine the egg whites and dry mixture into a consistent batter. Your batter will reduce to about half the volume of the whipped egg whites as you fold. Pour the batter into a loaf pan lined with parchment paper, and very gently smooth the top of the batter over with the spatula. Be careful not to deflate the batter anymore.
    3.
Bake the loaf pan for 20 minutes. Then, remove from the oven and sprinkle the remaining sesame seeds over the top of the loaf. Gently fold a piece of aluminum foil over the pan, creating a vented tent. Return to your oven and bake for an additional 40-45 minutes.
    4.
Once done baking, use the parchment paper to pull the bread out of the pan and let it cool completely. This bread loaf will be about 2 inches tall. Slice the cooled loaf in half to make 2, 2-inch-tall squares. Slice both of those squares in half horizontally through the middle to create a total of 4 slices of bread - enough for 2 sandwiches.
