Instructions

    1.
    Prep all ingredients: dice the boneless chicken thighs into 1" pieces, mince the garlic, and cut the bell peppers into triangular pieces. Set aside the chicken and garlic.

    Cut an onion in half, peel, quarter each half, and break them apart.
    3.
    Preheat a large nonstick skillet or wok over high heat until very hot. Add oil, then add the chicken. Cook undisturbed for several minutes until browned, then season with ½ tsp kosher salt and ½ tsp black pepper. Stir and cook until chicken is fully cooked.
    4.
    Add the minced garlic to the chicken and cook for 30 seconds until fragrant. Remove the chicken from the skillet and set aside.
    5.
    Add ½ tbsp of oil to the skillet, then add the onions and cook for 1 minute, stirring constantly. Add the bell peppers and cook until they begin to soften but remain crunchy. Season with ¼ tsp kosher salt.
    6.
    Add the chicken back into the pan with the bell peppers and onions, tossing to distribute evenly. Taste and add more salt and pepper if desired.
    7.
    Top the finished dish with sliced scallions and serve. The salt and pepper chicken should be salty and peppery!
