Description

Imagine sinking your fork into a vibrant bell pepper, yielding to reveal a heart of savory, richly seasoned meatloaf. This isn't your typical stuffed pepper; it's a delightful fusion of comfort food classics, where the familiar warmth of meatloaf meets the colorful freshness of sweet peppers. The peppers, baked to tender perfection, offer a subtle sweetness that beautifully complements the robust, umami-packed meatloaf within.

The meatloaf itself is crafted from a blend of ground pork, creating a moist and flavorful base. A medley of aromatic spices weaves its way through the pork, creating layers of savory depth. Hints of onion and garlic dance on the palate, while a touch of sweetness from tomato adds a comforting, nostalgic note.

The texture is dense yet tender, providing a satisfying bite that holds its shape within the pepper. Each forkful delivers a harmonious balance of textures and flavors that is both comforting and exciting. As the peppers bake, their natural sweetness intensifies, creating a caramelized exterior that’s slightly crisp and deeply flavorful.

The vibrant colors of the peppers – whether you choose green, red, yellow, or orange – add visual appeal to the dish, making it a feast for the eyes as well as the palate. For an extra layer of indulgence, consider topping each pepper with a generous blanket of melted cheese during the last few minutes of baking. As the cheese melts and bubbles, it adds a creamy, decadent element that elevates the dish to new heights.

These meatloaf-stuffed peppers are perfect for a hearty and satisfying meal. They're equally well-suited for a cozy weeknight dinner or a casual weekend gathering. Serve them with a simple side salad or roasted vegetables for a complete and balanced meal.

This dish is not only delicious but also a fun and creative way to enjoy classic comfort food with a healthy twist.

Instructions

    1.
Preheat an oven to 400 degrees. In a bowl, use your hand to mix together the ground pork with all the ingredients except for the bell peppers.
    2.
Prepare green bell peppers that are 5-oz each by slicing off the tops and removing the seeds. Arrange this face up in a glass baking dish.
    3.
Stuff each pepper with the ground pork. Use either a long toothpick or skewer to poke 4-5 holes into the meat to help the centers cook.
    4.
Wrap a piece of foil over the baking dish. Bake the dish for 60 minutes. If there is a lot of excess fat after removing the foil, use this little trick to drain the grease away: use a toothpick to poke a hole through the base of each bell pepper and let the grease drain from the pork into the dish.
