Instructions

    Make the sauce first to cool and thicken. In a small pot, combine chicken broth, orange juice, soy sauce, liquid stevia, red pepper flakes, and sesame seeds. Heat over medium heat until simmering. Remove cup of liquid, whisk in paleo flour until dissolved, and slowly pour back into the pot while stirring.

    Stir over heat until reduced and thickened. Add butter and stir until melted, forming a thickened, buttery sauce. The sauce is done when it coats the back of a spoon. Set aside to cool.

    Pat chicken dry and cut into 2x1 -inch pieces. Season with salt, pepper, onion powder, garlic powder, and ginger powder. Set aside. Add avocado oil to a wok or non-stick pan, about 2-inches deep.

    Heat avocado oil over medium-high heat. Whip egg white in a stand mixer until medium-stiff peaks form. Fold whipped egg white into the chicken pieces until coated.

    Drop battered chicken pieces into hot avocado oil. Fry on one side for 2-3 minutes until golden. Flip and continue frying until golden on all sides, flipping in 30-second increments until darker golden and crispy. Transfer to a plate lined with a paper towel to drain.

    Discard leftover oil. Wipe the wok/pan clean, add the second amount of avocado oil, and heat. Wash, cut the core, and chop bok choy. Add to wok, season with salt, pepper, red pepper, garlic powder, and sesame seeds. Cook until wilted, glossy, and charred.

    Set aside bok choy. In a new pan, pour cauliflower rice and soy sauce. Heat over high heat until golden brown. Reduce heat and stir in olive oil. Distribute rice among serving bowls. Add stir-fried bok choy on top.

    Add fried chicken to a large mixing bowl. Pour the orange sauce over the chicken and gently fold until completely coated. Top each bowl with about 3 - 4 ounces of fried orange chicken. Garnish with sesame seeds, zested orange peel, chopped green onion, or roasted seaweed strips.
