Instructions

    Begin by boiling a few inches of water in a medium-sized stock pot. The pot should be large enough to hold the bowl of a stand mixer without the bowl touching the boiling water. Whip cold heavy cream until stiff peaks form. Place the whipped cream in the refrigerator.

    Combine the eggs and sugar in the stand mixer bowl. Whisk together, then place the bowl over the boiling water to steam. Whisk constantly, scraping the sides occasionally, until the eggs reach 160°F (71°C) and no more. This should take about 5 minutes; increase heat if it takes longer.

    Remove the bowl from the heat and place it in the stand mixer fitted with a whisk attachment. Whip the eggs until they have quadrupled in size, about 6-8 minutes. After the first 3 minutes, add the orange zest and vanilla extract.

    Continue beating for a total of 6-8 minutes or until the mixture resembles soft serve ice cream. Gently fold the egg mixture into the whipped cream. Then, fold everything together very gently until well combined, adding the orange juice at this stage as well.

    Pour the mixture into an 8" x 8" pan or a loaf pan. Freeze until solid, about 6-8 hours. Before serving, allow it to temper at room temperature until soft enough to scoop with a hot ice cream scoop.
