Instructions

    1.
Prepare the chicken breasts by rubbing each one with 1/4 teaspoon of olive oil. Season generously with salt, pepper, onion powder, garlic powder, and chili powder. Heat a pan over high heat until it's nice and hot. Place the chicken breasts in the pan, seasoned side down, and let them cook undisturbed until the spices develop a beautiful char.
    2.
Flip the chicken breasts over and top each one with minced green onion, crispy bacon bits, and shredded colby jack cheese. Reduce the heat to medium, cover the pan with a lid, and let the chicken continue cooking for about 3 more minutes, or until the cheese is fully melted and gooey. Once the chicken is cooked through, remove it from the pan and set it aside to rest while you quickly prepare the macaroni.
    3.
In a small pot over low heat, melt the butter. Add the cream cheese to the melted butter and stir until smooth and lump-free. Pour in the almond milk, barbecue sauce, and minced garlic. Stir continuously as you bring the almond milk to a gentle simmer. Once the milk is hot, reduce the heat to very low. Add the first portion of cheddar cheese to the pot and stir until melted and fully incorporated.
    4.
Keep the pot over the lowest possible heat. Prepare your shirataki noodles by draining and rinsing them thoroughly, then drain them again. Gently fold the shirataki noodles into the cheese sauce, along with the remaining shredded cheddar cheese. Remove the pot from the heat and continue folding until all the cheese is melted and the sauce has thickened. Let the macaroni cool slightly before serving alongside the monterey chicken for a complete and satisfying meal.
