Description

Imagine the comforting warmth of roasted acorn squash, its naturally sweet flavor elevated by a savory-sweet miso butter glaze. This dish begins with halved acorn squash, its vibrant orange flesh promising a delightful culinary experience. The squash is then gently coated in a luscious mixture of melted butter and the umami-rich depth of white miso paste, creating a harmonious blend of flavors.

A touch of sweetener balances the savory notes, resulting in a truly irresistible glaze. The squash is roasted to perfection, transforming its firm texture into a tender, melt-in-your-mouth sensation. The heat intensifies the natural sugars of the squash, creating caramelized edges that offer a delightful contrast to the creamy interior.

Once the squash is tender and beautifully browned, it's time for the finishing touch: a generous sprinkling of sliced, roasted almonds. These add a satisfying crunch and nutty aroma, complementing the sweet and savory flavors of the squash. Feel free to experiment with other toasted nuts, such as pistachios, pecans, or walnuts, to create your own unique variation.

The roasting process softens the squash, making it a delightful and easy-to-eat side dish or appetizer. The combination of sweet, savory, and nutty flavors creates a truly memorable culinary experience. This versatile dish pairs well with a variety of main courses, from roasted meats to vegetarian entrees.

Serve it alongside your favorite protein and a medley of colorful vegetables for a complete and satisfying meal. Whether you're looking for a flavorful side dish for a holiday gathering or a simple yet elegant addition to your weeknight dinner, this roasted acorn squash with miso butter glaze is sure to impress.

Instructions

    1.
Prepare the acorn squash by cutting it in half and then remove the seeds with a spoon. Place each half cut side down and thinly slice the acorn squash into slices. Place the slices into a large mixing bowl. Melt the butter in the microwave in a small bowl. Whisk together the butter, sweetener, and white miso paste together. Add the miso mixture to the squash slices and toss well to coat.
    2.
Place half of the acorn squash into the bottom of an air fryer basket. Be sure to spread out the slices so they are in a single layer.
