Description

Imagine a delightful combination of flavors and textures, all nestled within a tender zucchini. This recipe transforms the humble zucchini into a satisfying and comforting dish, reminiscent of a loaded baked potato but with a lighter, fresher twist. Tender zucchini halves are transformed into edible boats, ready to be filled with a treasure of savory goodness.

The zucchini's mild sweetness provides a perfect canvas for the creamy, cheesy filling. Picture a luscious blend of tender broccoli florets, their earthy notes mingling beautifully with smoky bacon bits. Each bite offers a delightful contrast – the slight firmness of the broccoli against the crispy, salty bacon.

This mixture is then enveloped in a velvety sauce, creating a harmonious marriage of flavors that will tantalize your taste buds. Once filled, the zucchini boats are crowned with a generous layer of melted cheddar cheese. As the cheese bakes, it transforms into a golden, bubbly blanket, its sharp, tangy flavor adding another dimension to the dish.

The aroma alone is enough to make your mouth water, promising a warm and satisfying experience. But the magic doesn't stop there. Once out of the oven, these zucchini boats can be adorned with a sprinkle of fresh chives, their delicate oniony flavor adding a pop of freshness and color.

Feel free to personalize your zucchini boats with your favorite baked potato toppings. A dollop of sour cream would add a cool tang, while a sprinkle of red pepper flakes could introduce a touch of heat. The possibilities are endless!

These loaded zucchini boats are not only delicious but also visually appealing. The vibrant green of the zucchini, the bright colors of the filling, and the golden-brown cheese create a feast for the eyes as well as the palate. They are perfect as a light lunch, a satisfying side dish, or even a creative appetizer.

Whether you're looking for a healthier alternative to a classic comfort food or simply want to try something new and exciting, these loaded zucchini boats are sure to impress. They offer a delightful and guilt-free way to enjoy the flavors you love, all while incorporating more vegetables into your diet.

Instructions

    1.
Preheat an oven to 350 degrees and line a sheet tray with parchment paper. For the broccoli filling, combine in a bowl minced broccoli (if using thawed from frozen, make sure excess liquid is drained from your broccoli), bacon bits, and cream cheese. You may need to soften the cream cheese for 10 seconds in a microwave before adding. Set this filling aside.
    2.
Prepare one large zucchini (starting weight about 8 oz) by removing the ends and slicing the zucchini in half, long ways. Use a spoon, paring knife, or pastry scoop (a melon baller works here as well) to remove the inside flesh of each zucchini half. The zucchini weight listed in the ingredients should be your yield weight after removing the core.
    3.
Drizzle 1 tsp of olive oil over each zucchini half and sprinkle a pinch of salt and pepper over each zucchini half as well.
    4.
Place the zucchini halves on your sheet tray. Pack the broccoli filling into each zucchini half. Top each zucchini boat off with about ">")+(2/15 cup of cheddar cheese. Bake the zucchini boats for 30 minutes and enjoy!
