Instructions

    Thinly slice the sirloin steak into 1 ½" x 1 ½" pieces. Place in a medium mixing bowl and combine with kosher salt, sambal paste, and soy sauce. If using fine salt, halve the amount. Allow the meat to marinate while preparing the vegetables.

    Thinly slice the cucumbers and radishes using a mandolin or a very sharp knife. Slice the scallion on a bias. Arrange all vegetables on a plate and refrigerate until ready to assemble the bowls.

    Heat a medium non-stick skillet over HIGH heat until very hot. Add oil and heat for a few seconds. Add the marinated meat, ensuring the pieces are spread out. Allow the bottoms to sear undisturbed for about 3-4 minutes until well-browned. If the pan starts to smoke, reduce heat to medium-high. Stir the meat and continue cooking until cooked through. Drizzle with sesame seed oil and remove from heat.

    While the steak is cooking, heat the cauliflower rice in the microwave (pre-bought steamable cauliflower rice is recommended for convenience). Assemble the bowls by placing cauliflower rice at the bottom, topping with cooked meat, followed by cucumbers, radishes, kimchi, and a sprinkling of scallions. Drizzle with sriracha mayo if desired.
