Instructions

    Preheat an oven to 375 degrees Fahrenheit. Slice a large link of kielbasa in half lengthwise and arrange the halves in the base of a 9x13 inch glass baking dish. Set aside.

    Remove the stems from the mushrooms and chop the mushroom caps into quarters or small, chunky pieces. Melt the butter in a large non-stick pan over medium heat and add the mushrooms. Cover the pan with a lid and cook the mushrooms for about 4 minutes, or until they have softened.

    Stir the thyme, salt, garlic, and paprika into the mushrooms. Remove the lid and cook uncovered for another 4 minutes, allowing the excess moisture to evaporate.

    Pour the cooked mushrooms over the kielbasa in the baking dish, spreading them evenly. In a separate bowl, whisk together the remaining ingredients (dairy filling). Pour the dairy mixture over the mushrooms.

    Bake the dish uncovered in the preheated oven for 40-45 minutes, or until the filling is set (does not wiggle) and the cheese on top is golden brown. Allow the casserole to cool slightly before slicing into 4 servings.
