Instructions

    1.
    Cut the bacon into small pieces. Add them to a cold large nonstick skillet. Turn the heat to medium and allow the bacon to render its fat until crispy, about 7-8 minutes.

    Remove the crispy bacon with a slotted spoon and transfer it to the Instant Pot bowl.

    Salt the chuck roast and season it with garlic powder on both sides. Place it directly into the hot bacon fat in the skillet and sear it on both sides for several minutes until evenly browned.

    Do not be afraid to deeply sear the roast; it is hard to burn it, especially with plenty of fat in the pan.

    Place the seared roast into the bottom of an Instant Pot. Add the cooked bacon, mustard, dill, smoked paprika, and allspice. Pour in enough beef broth to almost cover the roast. Set the Instant Pot on high pressure for 75 minutes.

    In the meantime, blanch the pearl onions for 30 seconds in boiling water.
    7.
    Shock the blanched pearl onions in an ice bath, and then use a paring knife to trim the onions’ ends and peel the papery outer skins off.
    8.
    Release the pressure from the Instant Pot once the timer ends and add the peeled pearl onions. Cook them for 3 minutes on high pressure, then release the pressure. Serve the tender beef immediately with a delicious keto-friendly side dish.
