Description

Picture this: your kitchen, alive with the savory aroma of slowly stewed onions, sweet bell peppers, and ripe tomatoes. A delicate smokiness drifts in, hinting at perfectly grilled sausage. The combination is enough to stir any appetite.

This dish offers a fresh take on a beloved Hungarian classic. It’s a hearty and comforting meal, ideal for chasing away the chill on a cool day, equally satisfying for lunch or a light dinner. The rich flavors meld together beautifully, creating a symphony of taste that dances on your palate.

Consider pairing this with a simple side salad, its crisp freshness providing a counterpoint to the stew's depth. Or perhaps some low-carbohydrate vegetables, gently sautéed in olive oil or butter, to further enhance the meal's nutritional profile. This dish, traditionally a stew of peppers, tomatoes, and onions, has been reimagined to align with specific dietary needs.

The sweetness of red bell peppers shines through, complementing the tangy tomatoes and carefully balanced seasoning. Traditionally, this flavorful stew is often enjoyed with a slice of crusty bread, perfect for soaking up the delicious sauce. While that may not be an option, there are alternative ways to enjoy every last drop.

While Hungarian sausage is the classic choice, its firm texture and relative scarcity can make it challenging to find. In its place, this recipe calls for the softer, chewier texture of Polish sausage. Also known as kielbasa, this sausage is more readily available in most grocery stores.

Though it may deviate slightly from the traditional preparation, the result is an equally delicious and satisfying meal. The juicy sausage adds a wonderful depth of flavor to the already vibrant stew. The overall result is a deeply satisfying and flavorful dish that will leave you feeling warm and content.

Instructions

    1.
Slice kielbasa into round or oval slices and arrange them all flat in a large pan. Heat the sausage at high heat and cook the pieces until they char on one side. Flip the sausage and char it on the other side as well. Transfer all the cooked sausage aside for later, and return your empty pan to the stove.
    2.
Thinly-slice red bell pepper and toss the pieces in your pan with olive oil. Cover the pan with a lid and cook the peppers down over low heat until they re super tender. Then, season the bell peppers with onion powder and paprika. Stir to combine.
    3.
Next, add chopped stewed tomatoes from a can to the pan. Your tomatoes could also be in larger chunks or whole pieces. Cover the pan with a lid again and stew the tomatoes down further in your peppers. A sauce should begin to form in the pan as the tomatoes soften and break down.
    4.
Season the pan with salt and pepper, and adjust any seasonings to taste. Add the sausage back to the pan and cook further with the lid on top. Once the sausage is hot, the tomatoes are soft and broken down, and a sauce has formed, the Lecsó is done.
