    Preheat an oven to 375°F (190°C). In a food processor, combine the flours, sweetener, xanthan gum, salt, shortening, and baking powder. Pulse until the mixture is well combined and resembles coarse crumbs.

    Place the dough on a piece of parchment paper and cover with another piece of parchment. Roll the dough out thinly to the edges of the parchment, forming a rectangular shape approximately ¼ inch (6mm) thick. Freeze the dough for 20 minutes to allow it to firm up.

    Cut the dough lengthwise into 3-inch (7.5cm) strips, then cut down the middle of each strip to create smaller rectangles. Trim the edges to neaten the rectangles. Freeze again for 20 minutes to ensure the dough is firm and easy to handle.

    Spread one half of each rectangle with 1 teaspoon of your favorite sugar-free jam, leaving a small border around the edges to seal.
