    Preheat an oven to 300 F. Separate the yolks from the egg whites, being careful not to break any of the yolks (if a yolk breaks, discard all of the whites). The best method for separating eggs is to crack them into a bowl, then use your hands to gently cup the yolks, allowing the whites to fall through your fingers. Place the egg whites into the bowl of a stand mixer fitted with a whisk attachment.

    Begin whipping the egg whites until they become foamy. Add the cream of tartar and cornstarch, then continue beating until stiff peaks form. To check, stop the mixer, remove the whisk, and dip it back into the whites, pulling straight up. If the peak that forms doesn't fall over, you've achieved stiff peaks.
