Make 4 incisions, one at each quarter, cutting through to the flat surface but leaving ½ inch at the top. Then, make 3 incisions between each quarter-incision, totaling 16. Turn the onion over and spread the bloomed pieces out wide.

    Place almond flour in a large bowl (you may need more). Press the bloomed onion into the almond flour, ensuring it's lightly coated. In another bowl, whisk the egg and cream together. Transfer the onion to the egg mixture and rotate it until fully coated.

    In the almond flour bowl, combine ground pork rinds with pepper, paprika, and garlic powder. Transfer the wet onion to the pork rind mixture and rotate until breaded, sprinkling the mixture over the separated pieces. Loosely wrap the onion in aluminum foil and freeze overnight for at least 12 hours.

    Preheat an air fryer to 400 degrees. Remove the onion from the freezer, open the foil, and roll it down to act as a base. Gently re-bloom the onion and bake on a low-set air fryer tray for 17 minutes, rotating to avoid burning.
