Description

Imagine a comforting bowl of pasta, but lighter and brighter, featuring a rich and savory meat sauce that’s been subtly infused with the delicate flavor of poultry. This isn’t your average tomato sauce; it’s a carefully crafted blend where the inherent sweetness of ripe tomatoes is deepened by the umami notes of browned ground meat. The poultry adds a layer of complexity, creating a nuanced flavor profile that dances on your palate.

What truly sets this dish apart is the velvety texture achieved by swirling in a generous pour of heavy cream. The cream doesn’t just add richness; it mellows the acidity of the tomatoes, creating a harmonious balance of flavors. It clings beautifully to the strands of zucchini, ensuring that every bite is coated in decadent goodness.

The aroma alone is enough to draw you in – a tempting blend of herbs, tomatoes, and savory meat, promising a satisfying and comforting experience. Instead of traditional pasta, this dish features zucchini noodles, which have been lightly roasted to coax out their natural sweetness and subtly soften their texture. Roasting prevents them from becoming watery and adds a gentle char that complements the sauce perfectly.

The zucchini noodles provide a delightful al dente bite, contrasting the smooth, creamy sauce and adding a refreshing element to the overall dish. Finally, a generous snowfall of freshly grated parmesan cheese completes the culinary experience. The salty, nutty flavor of the parmesan cheese enhances the savory notes of the sauce, while its slightly granular texture adds another layer of interest.

Each strand of zucchini, coated in the creamy, poultry-infused meat sauce and topped with parmesan, offers a satisfying explosion of flavors and textures. This dish is a celebration of simple ingredients transformed into a truly memorable meal – a comforting, flavorful, and surprisingly light alternative to traditional pasta dishes that is sure to become a new favorite.

Instructions

    1.
Preheat an oven to 400 degrees. Spiralize a large zucchini and spread the pieces out on a seasoned sheet tray. You may also line a sheet tray with parchment, but this may affect your baking time. Bake the zucchini for 15 min. Then, set them aside to cool.
    2.
In a large pot, heat the olive oil and place in the ground turkey. Season the turkey with the salt, pepper, oregano, garlic powder, onion powder, and red pepper. Cook the turkey on high heat until the meat is cooked through, slightly golden, and the pot begins to brown.
    3.
Turn the stove heat down to low and stir in the tomato paste so it coats all the turkey. Stir in the heavy cream and chopped basil. Close the lid over your pot and let simmer for 3-4 minutes.
    4.
Stir in the chicken broth and bring the pot to a simmer once again. Leave the lid off this time and openly simmer for 10 minutes. Once reduced, turn the stove heat off. Stir the zucchini noodles into the meat sauce before serving. This recipe was served with shredded parmesan and fresh basil!
