Instructions

    Preheat oven to 325°F (163°C). In a large bowl, whisk together almond flour, coconut flour, baking powder, salt, stevia, xanthan gum, first portion of pepitas, and melted butter. In a stand mixer, whip egg whites and cream of tartar until stiff peaks form.

    Gently fold egg whites into flour mixture in 3-4 additions until just combined, maintaining a consistent texture. Line a 9x5 inch (23x13 cm) bread pan with parchment paper and fill with batter. Gently even out the top without deflating egg whites.

    Bake for 10 minutes. Sprinkle coconut flakes and remaining pepitas over the top and bake for another 15 minutes. Cover with an aluminum foil hood and bake for a final 30 minutes.

    Cool for 10-15 minutes. Slice the loaf in half vertically to create 2 smaller loaves. Slice each loaf in half through the center to create 4 slices of sandwich bread.
