Instructions

    Using kitchen scissors, trim the broccoli florets to yield about one cup. Place them in a small pan with a tablespoon of water and gently cook for one to two minutes until slightly tender. Set aside to cool.

    Cover the spinach with boiling water to slightly wilt it. Drain the water and set the spinach aside to cool.

    Heat olive oil in a skillet over low-medium heat. Mince the garlic and finely chop the onion. Add them to the skillet and sauté until softened. Set aside to cool.

    Preheat the oven to 400 degrees Fahrenheit. Lightly grease a shallow oven tray with a bit of oil.

    In a mixing bowl, combine the cooked broccoli, ground almonds, Parmesan, cheddar, sautéed onion and garlic. Roughly chop the wilted spinach and add it to the bowl. Season with salt and pepper to taste, and stir everything together thoroughly.

    Add the egg to the mixture and mix well until everything is thoroughly combined.

    Divide the mixture evenly into two portions and shape each portion into a patty.
    8.
    Transfer the patties to the prepared oven tray and bake for 18-20 minutes, or until they are cooked through and golden brown on all sides.
