    Preheat an oven to 500 F. Place the pork in a large casserole dish (e.g., 13"). Combine sweetener, five-spice powder, Szechuan peppercorns, white pepper, sesame seed oil, Shaoxing wine, kosher salt, soy sauce, hoisin sauce, molasses, optional red food coloring, and minced garlic. Mix well and pour over the pork.

    Distribute the sauce over the pork, cover, and marinate overnight. The next day, place a wire rack over a rimmed baking sheet. Arrange the meat on the rack, reserving the marinade. Add 1 cup of water to the baking sheet to prevent smoking. Roast the first side for 25 minutes.

    Flip and baste the second side with the reserved marinade using a silicone brush. Cook for 20-25 minutes, adding water to the baking sheet if needed to prevent smoking. Flip again and roast for another 15 minutes until charred.
