Instructions

    1.
    Trim the tops of the broccoli florets using kitchen scissors to create small rice sized grains. You should have around two cups of rice.
    2.
    Add the pine nuts to a dry pan over a low heat and toast for a minute or two until lightly golden. Set aside.

    Heat a tablespoon of olive oil in a small pan over a low/medium heat. Finely slice the garlic and add to the pan, sweating until tender.
    4.
    Add the broccoli grains, lemon juice, remaining olive oil, lemon zest, salt and pepper and stir well to combine. Cook for just a minute or two until the broccoli is hot through.
    5.
    Top the rice with the toasted pine nuts to serve.
