Description

Imagine a warm, comforting casserole that captures the essence of a classic burrito, but with a lighter touch. This burrito casserole is a delightful layering of flavors and textures, designed to satisfy your cravings without weighing you down. It begins with a base of specially crafted tortillas, chosen for their ability to deliver that familiar soft chewiness while keeping things on the lighter side.

Next comes a generous layer of savory ground beef, seasoned with a blend of spices that evoke the authentic taste of a well-loved burrito filling. Think cumin, chili powder, and a hint of garlic, all melding together to create a rich, aromatic foundation. This beefy layer is then generously coated with vibrant red salsa, adding a juicy tanginess that cuts through the richness and awakens the palate.

A blanket of crisp lettuce follows, providing a refreshing counterpoint to the warmth of the other ingredients. The cool, slightly bitter notes of the lettuce leaves add a wonderful textural contrast, preventing the casserole from becoming overly heavy. And finally, a molten layer of cheese tops it all off, bubbling and browning to perfection.

The cheese, with its creamy, slightly salty flavor, binds all the elements together in a harmonious whole. This casserole is endlessly adaptable. Feel free to add your own personal touch with your favorite toppings.

Diced avocado offers a creamy, healthy fat; a dollop of sour cream provides a tangy coolness; or pickled jalapeños deliver a spicy kick. Whether you're looking for a comforting weeknight dinner or a make-ahead meal for busy days, this burrito casserole is a versatile and delicious option. Its layered construction makes it easy to customize to your liking, and its satisfying flavors are sure to please everyone at the table.

It’s a celebration of those familiar burrito flavors, reinvented in a comforting and convenient casserole form.

Instructions

    1.
Heat olive oil in a large skillet over high heat. Add the ground beef and break it up with a spoon. Season generously with salt, pepper, onion powder, garlic powder, cumin, and cayenne pepper. Cook until the beef is browned and cooked through completely, draining any excess grease.
    2.
Preheat your oven to 350°F (180°C). Select an 11x7 inch glass baking dish. Spread a thin layer of red salsa on the bottom of the dish. This will help prevent the casserole from sticking and add a burst of flavor.
    3.
Arrange approximately 1 1/2 Keto tortillas over the salsa layer, overlapping as needed to cover the bottom of the dish. Spread about 1/4 cup of salsa evenly over the tortillas. Top with 1 cup of shredded lettuce, followed by half of the cooked ground beef. Sprinkle about 1/2 cup of shredded cheese over the beef.
    4.
Use another 1 1/2 Keto tortillas to create the next layer, repeating the process from Step 3: spread 1/4 cup of salsa over the tortillas, then add the remaining ground beef, followed by another 1 cup of shredded lettuce and 1/2 cup of shredded cheese. Finish with a final layer of 1 1/2 tortillas, spread with 1/4 cup of salsa, and top with the remaining 1/2 cup of shredded cheese.
    5.
Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 60 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted, bubbly, and lightly browned around the edges. Let the casserole cool for 5-10 minutes before slicing and serving.
