Description

Indulge in a slice of this uniquely flavored bread, crafted with green banana flour for a delightful twist. This bread offers a departure from the ordinary, embracing the subtle nuances of unripe bananas in a baked creation. The flour lends a distinctive character, providing a wealth of nutritional benefits while naturally remaining gluten-free.

Green banana flour distinguishes itself with its high content of resistant starch, a type of fiber celebrated for its positive impact on gut health. Acting as a prebiotic, it nourishes the beneficial bacteria that contribute to a balanced digestive system. The flavor profile of this bread is a captivating blend of gentle banana notes and earthy undertones, complemented by a touch of natural sweetness.

The texture is soft and slightly dense, making it a satisfying treat any time of day. The aroma is warm and inviting, reminiscent of a comforting kitchen. Enjoying this bread is about balance and moderation.

Savoring a slice allows you to experience the unique qualities of green banana flour as part of a mindful eating approach. The resistant starch in the flour also contributes to a lower glycemic response. For those who desire a more pronounced banana flavor, consider incorporating mashed ripe bananas into the batter.

This addition enhances the moistness and amplifies the natural sweetness of the bread. Serve it lightly toasted with a smear of butter or alongside your morning coffee for a nourishing start to the day. It's equally delicious on its own, offering a simple yet satisfying treat that can be enjoyed as a snack or a light dessert.

The subtle sweetness also makes it a pleasant pairing with savory complements like cheeses or cured meats.

Instructions

    1.
Preheat your oven to 350°F (175°C). Line a standard-sized loaf pan with parchment paper, ensuring it overhangs on both long sides for easy removal. Lightly spray the parchment paper with nonstick cooking spray. In a medium-sized mixing bowl, combine the dry ingredients: green banana flour, kosher salt, baking powder, and powdered Swerve. Whisk thoroughly to ensure even distribution.
    2.
Add the wet ingredients: eggs, melted coconut oil, banana extract, and vanilla extract to the dry ingredients. Whisk well until the batter is smooth and thoroughly combined. If desired, incorporate mashed banana into the batter at this stage for added flavor and texture.
    3.
Introduce the unsweetened almond milk and lemon juice to the batter. Be sure to add the lemon juice last, as it activates the baking powder for optimal leavening. Pour the batter into the prepared loaf pan, spreading evenly. For decoration, slice a medium-sized banana lengthwise and arrange the halves, cut-side up, on top of the loaf. If you're strictly adhering to a low-carb diet, you can omit the banana slices.
    4.
Bake in the preheated oven for approximately 45 minutes, or until the loaf is puffed, golden brown, and fully baked through. Insert a toothpick into the center of the loaf; if it comes out clean, the bread is done. Allow the loaf to cool completely in the pan before removing and slicing.
    5.
If the loaf is difficult to slice, invert it and slice from the bottom to avoid disturbing the banana slices on top. To prepare the glaze, combine 1/2 cup of Swerve with 1 1/2 tablespoons of unsweetened almond milk in a small bowl, mixing until smooth. Drizzle the glaze over the sliced loaf. Store the bread in an airtight container at room temperature for up to 2 days, or refrigerate for up to one week.
