Description

Imagine a dessert that embodies simplicity and elegance, a creamy baked ricotta that transcends the ordinary. This is not your typical cheesecake; it's a lighter, more nuanced creation that celebrates the pure flavor of ricotta cheese. Forget the heavy crust – here, the focus is entirely on the ethereal filling, a cloud of delicate sweetness that melts in your mouth.

As you slide a spoon through the baked ricotta, you'll notice its smooth, almost silken texture. It's firm enough to hold its shape, yet yielding and incredibly tender. The flavor is subtly sweet, with a delicate tang that awakens the palate.

It's a blank canvas that welcomes the addition of complementary flavors and textures. To elevate this simple dessert, consider a generous topping of candied pecans. Their crunchy texture and rich, nutty flavor provide a delightful contrast to the creamy ricotta.

The sweetness of the candied coating complements the cheese, creating a harmonious balance of flavors that will leave you wanting more. This baked ricotta is incredibly versatile. Serve it chilled for a refreshing treat on a warm day, or at room temperature to allow its flavors to fully develop.

It's perfect as a light dessert after a satisfying meal, or as an elegant addition to a brunch spread. For an extra touch of sophistication, drizzle a bit of honey or maple syrup over the top. A scattering of fresh berries would also add a burst of color and flavor.

Whether you're a seasoned baker or a novice in the kitchen, this baked ricotta is incredibly easy to make. It requires minimal ingredients and effort, yet delivers maximum flavor and satisfaction. It's a dessert that you can whip up in a matter of minutes, making it perfect for impromptu gatherings or when you simply crave something sweet and comforting.

The simplicity of this dessert is its greatest strength, allowing the natural flavors of the ricotta cheese to shine through. It's a celebration of pure, unadulterated deliciousness that will impress your guests and delight your taste buds. This baked ricotta is more than just a dessert; it's an experience, a journey into the heart of simple, elegant baking.

Instructions

    1.
Preheat the oven to 350 degrees Fahrenheit and lightly grease 2 medium ramekins with butter.
    2.
Add the ricotta, egg, cream, 1 tablespoon of lakanto syrup and the vanilla to a mixing bowl. Beat together to combine until smooth.
    3.
Divide the mixture evenly between the two buttered ramekins.
    4.
Transfer to the oven to bake for 25 minutes until lightly golden.
    5.
Whilst the cheese is baking, add the pecans to a small pan along with 1 teaspoon of lakanto syrup and the cinnamon. Turn the heat to low/medium and toast the nuts until fragrant. Stir often to ensure they are well coated in the syrup.
    6.
Allow the cheese to cool a little before carefully turning out onto a serving plate. Drizzle with the remaining syrup and top with the candied pecans to serve.
