Description

Imagine biting into a warm, yielding tortilla filled with seasoned shrimp, crisp coleslaw, and creamy guacamole. This shrimp burrito recipe brings together a symphony of flavors and textures in a satisfying and customizable meal. The shrimp, succulent and plump, are seasoned to perfection and cooked in olive oil, offering a delightful taste of the sea.

The coleslaw provides a refreshing crunch, offering a lighter alternative with fresh lettuce replacing traditional cabbage. The homemade guacamole adds a rich, smooth element, balancing the other components with its creamy texture and fresh avocado taste. These elements come together inside a soft tortilla.

Feel free to explore various options available at your local grocery store or even try your hand at making your own. The flexibility of this recipe extends beyond the tortilla. Consider adding other ingredients to personalize your burrito to your taste.

Pickled jalapenos or onions can introduce a tangy kick, while a dash of salsa or a dollop of sour cream can enhance the overall flavor profile. If you prefer sliced avocado over guacamole, feel free to make that swap. To prevent a soggy burrito, it's best to assemble it just before serving.

However, you can prepare the shrimp in advance, making it easy to assemble a quick and delicious lunch during the week. Storing the components separately and combining them when you're ready to eat ensures optimal freshness and texture. For an alternative to the tortilla, consider using cauliflower rice as a base, transforming the burrito into a vibrant and flavorful burrito bowl.

This is a great way to enjoy all the delicious flavors in a lighter format. Ultimately, this recipe is a blank canvas for your culinary creativity. Feel free to experiment with different ingredients and variations to create your perfect shrimp burrito experience.

Instructions

    1.
Combine shredded lettuce, mayonnaise, lemon juice, salt, pepper, and celery seed together in a dish. Set the mixture aside in your refrigerator to marinate for just 10 minutes. Since you’re not using cabbage, you don’t need to marinate it for very long.
    2.
Peel and devein jumbo shrimp, then season the shrimp with olive oil, salt, pepper, lemon pepper, onion powder, and garlic powder. Heat a pan on medium heat until hot, then add the shrimp. Cook the shrimp on both sides for 2-3 minutes or until golden. Pour the second amount of lemon juice over the shrimp when you flip them over to steam them.
    3.
Make quick guacamole by mashing avocado in a bowl. Mix the avocado with extra virgin olive oil, lime juice, and chopped green onion. Add salt to taste.
    4.
Grab a Keto tortilla to make a burrito (you can warm it up to make it easier to use). Spread the guacamole in a strip on one side of the tortilla. Arrange the creamy lettuce slaw on top of the guacamole. Finally, place the shrimp as the last layer of the burrito over the slaw and guac. Roll up the tortilla to finish the burrito.
