Description

Imagine a vibrant bowl bursting with the fresh, contrasting flavors of Southeast Asia. This deconstructed approach to a beloved Vietnamese sandwich transforms familiar elements into an easy-to-assemble and utterly satisfying meal. At the heart of this dish is savory ground pork, expertly seasoned with a blend of aromatic spices that evoke the bustling street food stalls of Vietnam.

The pork is cooked to perfection, ensuring a tender and flavorful base for the rest of the ingredients. Complementing the rich pork is a medley of crisp, pickled vegetables. These vibrant additions provide a delightful tangy counterpoint to the savory pork, offering a refreshing burst of acidity that awakens the palate.

Imagine the satisfying crunch of julienned carrots and daikon radish, lightly pickled to perfection and adding a delightful textural dimension to the bowl. Instead of traditional bread, this recipe features cauliflower rice that has been transformed with a quick fry. This adds a subtle nutty flavor and pleasing texture.

The cauliflower rice perfectly complements the other ingredients, creating a lighter and healthier foundation for the dish without sacrificing any of the satisfying qualities. To tie all these wonderful flavors together, a creamy, spicy sauce is drizzled over the bowl. This sauce adds a touch of heat and a velvety richness that elevates the entire dish.

The level of spice can be adjusted to your preference, allowing you to customize the bowl to your exact liking. Whether you prefer a gentle warmth or a fiery kick, this sauce is the perfect finishing touch. These bowls are incredibly versatile and perfect for meal prepping.

Assemble the components ahead of time and store them separately, combining them just before serving. This ensures that the vegetables stay crisp and the pork remains flavorful. Enjoy this delightful and customizable dish that is sure to become a new favorite.

Instructions

    1.
Divide the spinach in the bottom of 2 meal prep containers (or more if you’ve increased the recipe yield). Set the containers aside for assembly later.
    2.
In a bowl, mix together the mayo and sriracha. If you don’t want to use sriracha, any red/orange hot sauce can work here to make a spicy mayo. Set this bowl aside later for the assembly.
    3.
In a pan, combine the cauliflower rice, olive oil, and vinegar. Toss and heat on medium-high heat until the rice becomes slightly toasty brown. When done, divide the cauliflower rice amongst the 2 meal prep containers over the spinach.
    4.
Wipe the pan clean. Then, combine the ground pork, salt, pepper, red pepper, cumin, garlic, onion powder, and fish sauce in the pan. Cook on high heat while breaking up the pork with a spoon or spatula into crumbly pieces. Cook until the pork has a crisp, golden brown exterior. If you are concerned of burning, you can add additional olive oil to the pan at your discretion.
    5.
Distribute the cooked pork across the meal prep containers. Top off each container with an even amount of cabbage mix and cilantro, and the spicy mayo.
