Instructions

    1.
Begin by shredding all of the zucchini. The listed weight is the final yield after shredding and discarding the ends.
    2.
Use a thin dish cloth or cheesecloth to squeeze out as much liquid as possible from the shredded zucchini. Alternatively, place the zucchini in a colander and press down with a weighted bowl or plate to extract excess water. Let the zucchini sit for about 30 minutes to allow further drying.
    3.
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Once the zucchini is mostly free of water, combine it with the remaining ingredients in a large mixing bowl.
    4.
Line a large baking sheet with parchment paper. By hand, form the zucchini mixture into approximately 20 tater tots, placing them on the prepared baking sheet. Each tot should be about 2 inches long. As you roll the mixture, continue to squeeze out any excess water. Be aware that you may have a significant amount of water remaining in the bowl. If liquid pools on the baking sheet, the tots are still too moist.
    5.
Bake the tray of tater tots for 45 minutes, flipping them halfway through. They should have crispy, browned outsides and soft insides, just like potato tater tots! Let them cool for 5 minutes before serving.
