Description

Imagine tender ribbons of zucchini embracing a flavorful filling, transforming into a delightful dish perfect for a special occasion or a sophisticated appetizer. These zucchini rolls offer a harmonious blend of textures and tastes that will captivate your palate. Thinly sliced zucchini, lightly blanched to pliable perfection, become the delicate wrappers for a savory pork mixture, creating a visually appealing and texturally satisfying experience.

The pork filling, carefully seasoned with aromatic herbs and spices, boasts a rich and savory profile. The addition of egg acts as a binding agent, ensuring the rolls maintain their elegant form during baking, while also lending a subtle richness to the filling. Baking the rolls nestled close together further helps them retain their shape, resulting in perfectly formed and visually stunning appetizers.

As the zucchini rolls bake, the zucchini softens and sweetens, complementing the savory pork filling beautifully. The flavors meld and deepen, creating a symphony of tastes that is both comforting and refined. The tender zucchini provides a gentle contrast to the savory filling, while the herbs and spices add depth and complexity.

The result is a dish that is both elegant and approachable, sure to impress your guests or elevate your everyday meal. For an extra touch of flavor and visual appeal, consider serving the zucchini rolls with a vibrant tomato sauce. The acidity of the tomato sauce cuts through the richness of the pork, adding a bright and refreshing element to the dish.

Alternatively, a sprinkle of melted mozzarella cheese will add a creamy and decadent dimension, transforming the zucchini rolls into an even more indulgent treat. Whether served as an appetizer or a main course, these zucchini rolls are a versatile and delicious option. Their elegant presentation and flavorful filling make them a crowd-pleaser, while their relatively simple preparation makes them a manageable dish for any home cook.

Enjoy these delightful zucchini rolls as a light and flavorful meal, perfect for showcasing the versatility of this summer squash.

Instructions

    1.
Preheat your oven to 375 degrees Fahrenheit. Thinly slice zucchini lengthwise.
    2.
Drizzle ½ tablespoon of olive oil on the zucchini and rub all sides of the zucchini slices with them. Sprinkle with salt and bake for 10-15 minutes in the oven until they start to soften.
    3.
While the zucchini is baking, heat the remaining olive oil in a pan over medium heat. Once hot, mince or grate the garlic into the pan. Stir until the garlic is fragrant, then crumble up the ground pork and add it to the pan.
    4.
Brown the pork until the pork starts to brown in its own juices, then add the tomato paste, balsamic vinegar, and ¼ tsp. salt. Saute for 2-3 minutes, then remove from the heat and stir in chopped basil. Allow to cool slightly. Whisk an egg and mix it into the pork mixture.
    5.
Add a small amount of pork filling to the center of zucchini slice and roll the zucchini up. Place the zucchini roll filling side up onto a parchment covered pan or dish. Continue with the remaining slices until all of the pork filling is used up. Make sure the rolls are touching, as this will help them from unrolling.
    6.
Bake at 375 degrees for 15-20 minutes. Top with cheese during the last 5 minutes if you’d like!
