Instructions

    In a small pan, heat the olive oil over medium heat. Add the ground beef, salt, pepper, garlic powder, and basil. Cook until browned and slightly golden. Set aside to cool.

    Preheat your oven to 350 degrees. Once the beef has cooled, combine it in a bowl with the ricotta cheese. Set this filling aside.

    Peel 2 large zucchinis into 36 long, wide strips (enough for 9 ravioli). Aim for approximately 6 ½ oz of zucchini strips.

    Spread marinara sauce across the bottom of a large baking dish. Set the dish aside. Arrange 4 zucchini strips in a criss-cross pattern.

    Place approximately 2 tablespoons of beef ricotta filling in the center of the zucchini strips. Fold the zucchini ends over the filling, completely covering it. Place the ravioli in the prepared baking dish, zucchini ends tucked underneath.
    6.
    Repeat the previous step until all ravioli are made. Then, sprinkle about 1 teaspoon of parmesan over the top of each ravioli.
    7.
    Bake the dish for 20 minutes. Enjoy while the cheese and filling are hot and gooey!
