Instructions

    1.
    Peel the cucumbers and slice them in half lengthwise.

    Scoop out the seeds from the cucumber halves. Then, slice them into approximately ¼-inch thick U-shaped slices.

    Slice the country ribs very thinly, about ⅛-inch thickness.

    Heat a large pan over high heat until very hot. Add the pork, then season with ¼ teaspoon of sea salt and ¼ teaspoon of black pepper. Leave undisturbed until they release easily from the pan and are browned on one side. Stir.

    Add grated garlic and stir into the pork. Add 1 tablespoon of fish sauce and stir until pork is almost cooked through.

    Add the cucumbers and cover with a lid for 5 minutes. Add an additional 1 tablespoon of fish sauce and ½ teaspoon of sea salt. Cook covered for another 5 minutes until cucumbers are slightly soft, but still crunchy. Serve hot with cauliflower rice and a spoonful of the flavorful juice!
