    Pour off all oil except 2 tablespoons, leaving chicken in the wok. Add sliced red onion and cook for 2 minutes until softened.

    Add garlic, lemongrass, chopped dried chilies, and jalapeno to the wok. Cook for 30 seconds until fragrant. Add wine to deglaze, stirring to release browned bits. Cook for another 5 minutes until caramelized.
