Description

These unique cookies offer a delightful twist on a classic treat, crafted with a focus on wholesome ingredients. While they may not replicate the exact softness of traditional oatmeal cookies due to the absence of conventional grains, they present a satisfyingly crisp yet chewy texture that is sure to please. The heart of these cookies lies in their innovative take on "oats.

" Finely crushed almonds and shredded coconut come together to mimic the familiar taste and texture of oatmeal, creating a comforting base for the other flavors to shine. Each bite delivers a symphony of textures, from the delicate crunch of the almonds to the subtle chewiness of the coconut, all harmonizing to create a truly enjoyable experience. Subtle notes of vanilla and a touch of cinnamon dance on the palate, adding warmth and depth to every mouthful.

These cookies strike a delicate balance between sweetness and nutty richness, making them an irresistible treat without being overly indulgent. The natural flavors of the ingredients are allowed to shine, creating a profile that is both comforting and satisfying. These cookies are not only delicious but also incredibly versatile.

Prepare a batch for the week ahead and enjoy them as a quick and easy snack, or share them with friends and family at gatherings and celebrations. Their unique flavor and texture make them a welcome addition to any occasion. For those who enjoy experimenting with flavors, feel free to substitute almond butter with another nut butter of your choice.

Keep in mind that the flavor of the substitute may be more prominent, so adjust the other ingredients accordingly. These cookies offer a blank canvas for your culinary creativity, allowing you to tailor them to your specific preferences and create a truly personalized treat.

Instructions

    1.
Combine sliced almonds and unsweetened flaked coconut in a mixing bowl. Use your hand to crush the ingredients until they turn into small pieces that resemble oats. Then, add almond flour, tapioca flour, baking soda, salt, and cinnamon to the bowl. Use a spatula to combine the ingredients and distribute the "oats" throughout the mixture. Set this aside for later.
    2.
In a stand mixer with a paddle attachment, mix almond butter with brown sugar substitute, honey, vanilla extract, and liquid stevia drops. Blend until you have a completely smooth and room temperature mixture. Melt the coconut oil, then blend this into the wet ingredients as well. Finally, add the dry ingredients to the wet and blend them until you have sticky cookie dough.
    3.
You may choose to chill the dough prior to scooping the cookies. Line a sheet tray with parchment paper. Scoop 2-tablespoon portions of cookie dough onto the paper, and press each portion into a flat cookie about 2 ".5-inches wide. When all the cookies are portioned, freeze them for at least 20 minutes before turning on the oven to preheat at 350 degrees F.
    4.
When the oven is heated, bake the cookies for 15 minutes or longer. Look for golden edges and firm centers. The cookies should naturally release from the paper when they're done baking. Let the cookies cool for 10 minutes before moving to a baking rack to cool completely. Cookies that do not cool may fall apart easily when bitten into.
