    Dice the super firm tofu into approximately 1" x 1" pieces. Toss with 1 tbsp avocado oil and ½ tsp kosher salt to prepare it for crisping.

    Place the seasoned tofu in the air fryer and cook at 400°F (200°C) for 20 minutes, shaking the basket halfway through to ensure even crisping.

    While the tofu is air frying, prepare the stir fry sauce by whisking together the soy sauce, water, xanthan gum (for thickening), and sesame oil in a small bowl.
