Description

Imagine biting into a warm, savory morsel that tastes just like pizza, but is surprisingly light and wholesome. These delightful pizza bites are crafted from a carefully balanced blend of cauliflower, almond flour, hemp seeds, and a medley of aromatic herbs and spices. The result is a naturally gluten-free, dairy-free, and vegan treat that everyone can enjoy.

Each bite offers a satisfyingly chewy texture with a subtle crispness around the edges, making them irresistible. The cauliflower base provides a gentle earthiness that complements the nutty notes of almond flour and hemp seeds, while the herbs and spices create a familiar and comforting pizza flavor. These pizza bites are incredibly versatile.

Serve them as a fun appetizer for gatherings, a healthy snack for kids, or a light meal alongside a vibrant salad. A simple marinara sauce is the perfect accompaniment for dipping, adding a tangy sweetness that enhances the overall flavor profile. Feel free to experiment with other dipping sauces too – a creamy pesto, a zesty aioli, or even a spicy red pepper sauce would be equally delicious.

For an extra touch of freshness, garnish with a sprinkle of fresh basil or a peppery arugula salad. If you don’t have hemp seeds on hand, you can easily substitute them with more almond flour or ground flaxseeds for a similar texture and nutritional boost. For the sauce, try using a plain tomato sauce or marinara, and customize it with your favorite Italian herbs like oregano, thyme, and garlic to deepen the flavor.

A pinch of red pepper flakes can add a welcome kick if you like a little heat. Leftovers can be stored in the refrigerator for 3-4 days. To reheat, simply pop them in the oven until warmed through and the edges are slightly crispy again.

These pizza bites are a fantastic way to enjoy the flavors of pizza in a healthier, more mindful way. They're a testament to the fact that delicious food can also be good for you.

Instructions

    1.
Preheat the oven to 350°F/180°C and line a baking tray with baking paper. Remove any cauliflower leaves. Use a box grater to shred the cauliflower. Place the cauliflower rice in a large heat-proof bowl and drizzle 2 tablespoons of water over it. Microwave on high for 4 minutes. Leave to cool for 10 minutes so it’s easier to handle.
    2.
Transfer the cauliflower into a muslin cloth or thin linen kitchen towel. Gather the corners of the towel and twist to form a bundle. Hold the bundle over the sink and squeeze tightly to expel as much water as possible. Quite a lot of water will be released, but keep squeezing until you can't get any more water out.
    3.
Make the flax egg by adding 1 tablespoon ground flaxseed to a small bowl with 2.5 tablespoons of water, mix and set aside for 5 minutes to thicken. Add the cauliflower to a large bowl, along with ½ cup vegan shredded mozzarella, ground almonds, hulled hemp seeds, flax egg, garlic powder, onion powder, oregano, thyme, chili flakes (optional), sea salt, and black pepper to taste. Use your hands to gather the ingredients and form a ball of pizza dough.
    4.
Use a tablespoon as a guide to portion the dough. Roll a chunk between your palms into 12-14 balls. Place on the baking tray and top with the remaining vegan cheese.
    5.
Bake in the center of the oven for 12-15 minutes or until the 'cheese' has melted and golden. Whether you choose to make your own marinara sauce or use store-bought, heat through and serve alongside the vegan cauliflower pizza bites with fresh basil and a side salad.
