    In a small saucepan, combine water, brown sugar sweetener, a pinch of kosher salt, and a 3 piece of ginger. The ginger does not need to be peeled unless you would like to. If you do peel the ginger, you can scrape off the ginger skin with a spoon instead of a paring knife for as little waste as possible.

    Bring the mixture to a boil and then down to a simmer. Simmer the mixture for at least 5 minutes. This will allow the ginger to release all its spicy flavor into the syrup. Turn the heat off and allow it to sit as you prep the silken tofu.

    Take a block of silken tofu and cut it into thin slices. A 19 oz net weight block of silken tofu can be cut into about 8 slices to make 4 bowls with two pieces of tofu each.

    Microwave the necessary amount of tofu in the microwave on high for 30-45 seconds to make the tofu hot. Drizzle a good amount of the brown sugar syrup onto the hot tofu. Also, add a couple of pieces of sliced ginger from the syrup. The best way to eat this is to take a small amount of tofu in each spoon along with some spicy ginger syrup. Then once in a while eat a small amount of ginger with it for extra heat. This is a great dish if you are feeling under the weather, but is still a great way to get protein into your diet.
